I made these at the last minute as an afterthought, and they ended up being my favorite cupcakes of all time!! These are a sweet, moist orange cake topped with a creamy vanilla italian meringue frosting. They tasted exactly like a dreamsicle! I ended up with 3 extra after the boutique I made them for and I ate every single one of them!

Peanut Butter Cup Cupcakes
Reeses Peanut Butter Cups are a great weakness of mine. So are cupcakes. So I made these! The cake is a rich chocolate fudge. The frosting is a light, whipped peanut butter frosting. I finished these off with a Reeses Peanut Butter Cup garnish. These were my #1 seller at the Monster Mash Boutique where I was a cupcake vendor!

German Chocolate Cupcakes
German Chocolate Cake has always been a classic birthday cake flavor in my family. I thought it would be fun to make German Chocolate Cupcakes! German Chocolate cake is traditionally made with a sweet, lighter chocolate cake. I prefer to make my cake dark and rich. These are topped with their classic frosting; caramel with toasted pecans and coconut. The garnish is a chocolate dipped pecan. They were decadent!

Red Velvet Cupcakes
Red Velvet cake has got to be one of my favorite kinds of cake. Its kind of a mix between chocolate and vanilla cake, dyed a dark red, and finished with cream cheese icing. Some people prefer a roux-style icing for Red Velvet Cake, I prefer cream cheese; I think it brings out the smoothness of the cake. I tested recipe after recipe for these cupcakes and today I finally found one that has the crumb consistency I was looking for. Yay!

Individual Raspberry Cheesecakes
This week has been super busy! I have been testing recipes for an upcoming boutique event where I am going to be selling cupcakes and other treats. One of the recipes I tested today is individual cheesecakes. The cakes all have a little graham cracker crust bottom, and are filled with from scratch vanilla cheesecake filling. I finished them with a little rasberry coulis. The concept for these actually came from my awesome husband McKay! He says he gets all the credit....

Finished Luau Cake!


I swear I can make a cake that isn't pink! :) Here are some pictures of the finished Luau Cake! It was really fun to make. The cake was a black and white cake; half chocolate, half vanilla. The chocolate layers were filled with a rich chocolate ganache and the vanilla layers were filled with a yummy vanilla mousse.

Gum Paste Flowers for Luau Cake


Here are some pictures of gumpaste flowers I just finished for a Luau Birthday cake I have coming up. These flowers are completely edible (except for the wire holding them together), made of gumpaste, a type of sugar dough. After they are made and dried, they can be brushed with edible powder or airbrushed with edible paint. I airbrushed these today. These are going on a fabulous 2 tier birthday cake I am making in bit; I will for sure post the pictures of the finished cake!

The BEST Chocolate Cookie in the world

Here is a picture of some cookies I made the other day. This is probably my favorite kind of cookie: Chocolate Thumbprints. It is actually a "Godiva" recipe, taught to me by Chef Diane Fallis, my Pastry Chef instructor when I was in culinary school. These are soooo good! It is a chocolate shortbread cookie dipped in pecans, then finished off with some smooth chocolate ganache. YUM!

Shoe Cake!

Here is a cake I just made for my sister for her 15th birthday! She is absolutely obsessed with shoes, so I made up a shoe brand "Fine Shoes By Madison Kate", and designed a cake around the idea. Everything on the cake is completely edible (and yummy) even the shoe. It was a blast to make!

Close Ups of Pink Petal Cake
Here are some close ups of the Pink Petal Cake. The cake is covered with hundreds of hand molded gum paste flowers. The cake had sort of a contemporary feel to it. I just loved it!

Fruit Tarts!
I think that fruit tarts are a perfect summer dessert. I made these tarts with a almond-citrus crust, a cream cheese buttercream, and fresh fruit. I put grapefruit and orange zest in the crust which really helped cut through the sweetness of the buttercream.

White on White Damask Cake
This cake has white royal icing piping on white fondant. The flower bouquet is all gum paste. I think it turned out really nice!
